History : History and anecdotes of the “Vin de Champagne” throughout the party or Wines tasted.

The learning of all mecanisms of tasting the sparkling wine Foam, collar, cord, bubble from birth to breakdown… – or the still Wines: R.A.G. Time method.

Secrets of making : Grapes used in Champagne are analyzed as well as the blending, the role of reserve wines, the fermentation, liqueur de tirage, riddling, disgorging and dosage. For the still wine, processes of white, rosé and red making are explained.

Major regions of ChampagneCôte des Blancs, Marne Valley, Montagne de Reims, Sézannais, Côte des Bars… card support for the SAGA du CHAMPAGNE or French and regional maps for still wines.
Specific to the SAGA du CHAMPAGNE a word is said about the economical organization of the profession in Champagne: The Trade, Cooperation, the world of winemakers, CIVC…

Tasting of 5 different champagnes including a classic Brut (made ​​from a blend of 2 or 3 varieties), a crude Blanc de Blancs (100% Chardonnay), a white black (or Black Pinot and Pinot Meunier) for one Rosé or assembly, a Vintage or special Cuvee.

For the still wines 6 different wines dfrom a specific region or from main vineyards are tasted.

1.Every participant introduces him or herself in terms of wine experience (family background, experiences, lectures, exhibitions and visits to vineyards…)

2.A geographical overview of the different production areas, with a map support.

3.Tasting mechanisms of tasting sparkling or still wines.
A snack is served including Parmesan, almonds, Chaource and Bourgogne Cheeses, Fine charcuterie for the Champagnes and Ripened Farmer Cheeses from the same region than the wines for the still wines.
Time of questions and answers between each wine are provided.
